Avocado Cold Rolls, with Satay Dipping Sauce & Sweet Chilli Sauce

Avocado Cold Rolls
 1 Avocado, sliced
 6-8 Rice papers
 Pack of Rice Noodles
 2 Carrots, cut into matchsticks
 1 Capsicum, cut into matchsticks
 ½ Cucumber, cut into matchsticks
 ¼ Red Cabbage, thinly sliced
 1 cup leafy greens; spinach or lettuce
 200 g Organic firm Tofu, marinated & cooked
 Mint, small handful
 Corriander, small handful
 1 tbsp Seasame seeds
Satay Dipping Sauce
 2 tbsp Peanut Butter
 2 tbsp Maple Syrup
 2 tsp Water
 1 tbsp Tamari
 1 tbsp Ginger, finely chopped & Minced
 1 tsp Chilli Flakes
 Juice of 1 Lime
Sweet Chilli Sauce
 2 tbsp Rice Vinegar
 2 tsp Water
 2 tsp Maple Syrup
 1 tbsp Tamari
 1 Clove Garlic, finely chopped or Minced
 1 tsp Chilli Flakes
 Juice of 1 Lime

Method

Avocado Cold Rolls

Prepare enough Rice Noddles, according to the pack instructions.

Dip a rice paper into a bowl of hot water, turning until fully coated then lay on a board or plate (not wood as it sticks).

Sprinkle a few sesame seeds to the front of the roll, layer avocado, tofu and vegetables and a small portion of rice noodles.
Keeping to ¼ of the rice paper and enough space either side to fold each side in.

Once happy with your filling bring the closest edge over your ingredients and then fold each side in, gently roll until all the way.

Be care not to pull to tight to tear the rice paper or too loose that it falls apart.

Mix together all ingredients until combined.
