Cauliflower and Avcado Ceviche

Cauliflower & Avocado Ceviche. A traditional seafood dish turned into a vegan, oil free delight.

Ingredients List

 400 g cauliflower or half a medium cauliflower, cut into florets
 2 Ripe Avocados, diced
 Handful of fresh coriander, roughlt chopped
 1 Lime, juiced
 1 Red Onion, small & diced
 ½ tsp Sea salt
To serve if desired ... could be used instead of cutlery
 Tortilla chips

Method

1

Bring a pot of water to boil and add cauliflower florets.

Cook until tender, then add to a bowl of ice water to stop the cooking for 2 minutes, then drain.
Chop into small bite size pieces.

In a large bowl add the cauliflower, coriander, avocado, red onion, lime juice and salt.

Refrigerate until ready to eat.

Serve with tortilla chips and fresh lime.

Option to add 1 tsp "Nori flakes" to give it a fishy taste
