Ingredients List

The batter
  cup Self-raising flour
 1 Flax egg OR an egg (non-vegan)
 200 g Tinned or Frozen Sweetcorn
 2 Spring onions, chopped
Salsa
 1 Avocado, diced
 1 Tomato, diced
 ½ Red onion, diced
 1 Lime
 Handful of Coriander, roughly chopped
 1 tsp Olive oil

Method

Corn Fritter batter

Combine flour, egg, sweet corn and spring onion in a bowl and mixed to combine. Season with salt and pepper.

Top with avocado salsa and serve with lime wedges.

Mix together in a bowl the avocado, tomato, juice of ½ the lime, and red onion and season with salt and pepper.

Heat the oil in a fry pan and drop tablespoons of the corn batter into the pan, smooth the top and once browned flip over and brown the other side.

Serve straight away whilst warm
