Combine flour, egg, sweet corn and spring onion in a bowl and mixed to combine. Season with salt and pepper.
Mix together in a bowl the avocado, tomato, juice of ½ the lime, and red onion and season with salt and pepper.
Heat the oil in a fry pan and drop tablespoons of the corn batter into the pan, smooth the top and once browned flip over and brown the other side.
Serve straight away whilst warm
