Ingredients List

Salad mix (portions are flexible)
 Rocket leaves
 Baby Spinach
 Carrots
 Beetroot
 Cucumber
 Grape Tomatoes
 Hemp seeds
 Pepitas
 1 Avocado
 Alfalfa
 Nutritional Yeast ( Inactive yeast grown on molasas. High in protein, B12 and a great cheese substitute on its own and in recipes, cheesy sauces etc. Available in good health food shops and supermarket health food aisle. )
 Balsamic vinegar
Mandi's homemade Hummus
 1 can of Organic Chickpeas
 1 Garlic Clove
 45 g fresh Lemon juice
 1 tbsp Tahini
 20 g Olive Oil
  tsp Cumin
 ¼ tsp Chilli flakes (optional)
 1 pinch of Sea Slat (optional)

Method

Mandi's homemade Hummus
1

Blitz garlic in a blender, scrape down the sides.

Add all the rest of the ingredients into the blender.

To serve: drizzle some olive oil on top.

Salad mix

* Julienne the Carrots & Beetroot
* Dice the Cucumber
* Half the Grape Tomatoes
* Slice Avocado

Place chunks of Hummus around the salad mix.

To Dress:
1. Top with the Alfalfa
2. Sprinkling the Nutritional Yeast and balsamic vinegar.

(optional) - Sprinkle smoked paprika.
