Pesto Pasta and Plant based Parmeson Cheese

This is the base for a delicious whole food plant based pasta by Haley. In this recipe we have chosen to use organic brown rice pasta, ( you can use soba noodles or standard pasta of your choice. )

Ingredients List

Pesto:
 2 cups Basil
 1 Kale leaf
 1 small handful sunflower seeds
 2 Garlic cloves
 ¼ cup Nutritional yeast
 ¼ tsp Red Miso
  or upto 1/4 cup cold pressed extra virgin olive oil
 Pinch of Sea salt
 ¼ tsp Chilli flakes (optional)
Plant based Parmesan cheese:
 1 cup Walnuts
  cup Nutritional yeast
 ½ tsp onion powder
 ½ tsp garlic powder
 ½ tsp smoked paprika
 ¼ tsp Red Miso powder (optional)

Method

* This is the base for a delicious whole food plant based pasta. You can add in the following extras; semi sun dried tomato’s, olives and baby spinach if you would like too.

* In this recipe we have chosen to use organic brown rice pasta, ( you can use soba noodles or standard pasta of your choice. )

Pesto Ingredients:

Blitz garlic, scrape down, add nuts, blitz again.
Then add everything else for a couple of pulses.
Then turn food processor on very slow and add olive oil.

Add pesto on top of pasta, stir through.

Plant based Parmesan cheese:

Blitz until fine and crumbly.

Sprinkle the plant-based parmesan on top of pasta.

Don't forget to add diced avocado on top.
